Puran Poli
Ingredients:
For the filling (puran):
1 cup chana dal (split Bengal gram)
1 cup jaggery (grated)
1/2 tsp cardamom powder
For the dough:
1 cup wheat flour (or all-purpose flour)
1–2 tbsp oil or ghee
Water (as needed)
Other:
Ghee for cooking
Steps:
Cook the dal: Wash and boil chana dal until soft. Drain excess water.
Make filling: Add jaggery to the cooked dal and cook on low heat until thick. Mash well and add cardamom powder. Let it cool.
Prepare dough: Mix flour with oil/ghee and water. Knead into a soft dough and rest for 15–20 minutes.
Stuff and roll: Take a small dough ball, flatten it, place some filling inside, seal, and gently roll into a flat circle.
Cook: Heat a pan and cook the poli on both sides with ghee until golden.
Serve: Serve hot with extra ghee or milk.
