Misal Pav

Ingredients:

For the misal (curry):

  • 1 cup sprouted moth beans (matki) or mixed sprouts

  • 1 onion (finely chopped)

  • 1 tomato (chopped)

  • 1 tsp ginger-garlic paste

  • 1 tsp red chili powder

  • 1/2 tsp turmeric powder

  • 1 tsp goda masala or garam masala

  • 2 tbsp oil

  • Salt to taste

  • Water (as needed)

For serving:

  • Farsan (crispy snack mix)

  • Chopped onion and coriander

  • Lemon wedges

  • Pav (bread rolls)

Steps:

  1. Cook the sprouts in water with a little salt until soft.

  2. Heat oil in a pan. Add chopped onion and sauté until golden.

  3. Add ginger-garlic paste and tomato. Cook until soft.

  4. Add turmeric, chili powder, and masala. Mix well.

  5. Add cooked sprouts and some water to make gravy. Simmer for 5–10 minutes.

  6. Adjust salt and cook until flavors blend well.

  7. Pour misal into a bowl. Top with farsan, onion, and coriander.

  8. Serve hot with pav and lemon wedges.
