Kanda Poha

Ingredients:

  • 2 cups poha (flattened rice)

  • 1 onion (finely chopped)

  • 2 green chilies (chopped)

  • 1/2 tsp mustard seeds

  • A few curry leaves

  • 1/4 tsp turmeric powder

  • 2 tbsp oil

  • Salt to taste

  • 1 tbsp lemon juice

  • 2 tbsp roasted peanuts (optional)

  • Fresh coriander leaves (chopped)

Steps:

  1. Wash poha in water and drain well. Keep aside for a few minutes to soften.

  2. Heat oil in a pan. Add mustard seeds and let them splutter. Add curry leaves and green chilies.

  3. Add chopped onion and sauté until soft.

  4. Add turmeric and peanuts. Mix well.

  5. Add softened poha and salt. Mix gently and cook for 2–3 minutes.

  6. Turn off the heat and add lemon juice.

  7. Garnish with coriander leaves and serve hot.
